Grass Finished Whole Lamb Share

Our lambs started their life on another farm where they were fed grain. Since they have been on our farm they have been exclusively grass-fed. We purchased them when they were 2 weeks- 2 months old, so the amount of grain they ate would have been minimal.

Our lambs are Katahdin crosses. Katahdins are known for their lean and tender meat.

We require a $100 deposit to reserve a lamb share. The deposit is applied to the final price of $7.00/lb hanging weight. 

Lamb shares are available in the Fall only.. When we have lambs ready for butcher, we will deliver them directly to the butcher. A day or so later, we will contact you with the final hanging weight and balance due. You will pay us directly for the lamb. 

The butcher will also call you at that time to confirm your choice of cuts (we will provide a detailed document that walks you through the process and options available) and notify you when your meat is ready to pick up. You will pick it up directly from them. 

Turn-around time is usually just a week for fresh cuts and about 3-4 weeks for any cuts that need to be cured and/or smoked. Unless you specify otherwise, it will all be frozen when you pick it up so it can go directly into your freezer. 

Our Butcher

We use Keller Meats for all of our large animal harvests. We have always had great experiences with Tom and his crew and they are always accommodating to our sometimes unorthodox requests (chuckle). Their address is 3739 Avon Lake Rd, Litchfield OH 44253. You may also call them at 330-722-4501.

I realize that for those in the Columbus area it may seem like too far to drive. We understand that. Reach out to me and we can coordinate it so that I pick up the meat from the butcher, and you can either pick up from me or I deliver it right to you.

Calculating Total Cost

You will pay us directly for the lamb (we will email an invoice with the final balance soon after the lamb goes to harvest and we have the actual hanging weight) and you will pay the butcher directly for the processing.

The processing cost for lamb is a $160 flat fee.

For example, for a 110lb live lamb, the hanging weight will come to approximately 40-50 lbs. If you’ve reserved a Whole Lamb Share and the lamb weighs 45lbs, you’ll pay $315 to us at Firefly Homestead (of which $100 will already have been paid as your deposit).

And you’ll pay $160 to the butcher in slaughter/processing fees. If you budget $600-700 for a Whole Lamb Share, you’ll be in good shape.

Calculating Total Yield

The lamb is cut however you like. The butcher is very helpful and accommodating and we can work with you to be sure you get exactly what you’d like from your lamb share.

Most lambs will average approximately 50lbs hanging weight (the weight after slaughter and before the lamb is cut down). This is the weight we use to calculate the final cost. The finished weight you get back will be less than the hanging weight due to reduction of the hide, head, and feet, and boning.

From a 50lb lamb, you’ll get 35-45lbs in cuts. You can get even more if you also request the bones and the organs & offal (liver, heart, and kidney).

Everything is a Learning Experience

If you’ve never ordered lamb in bulk before, it’s an adventure! You’ll likely get cuts you’ve never seen before and you’ll learn new ways to prepare it to extract the best flavor. And next time, you’ll know a little better which cuts you like best and which you won’t order again.
